Vegan Royal Icing

RECIPE BELOW! I’m new to the royal icing scene, but I am kind of tooting my own horn because this first attempt of a vegan royal icing came out GREAT!

I needed some royal icing to glue our vegan gingerbread house together, so I just did it. WOO! I was pumped lol! I actually wished I made more dough so that I could decorate the cookies. It was flooding very well and setting great too!

This is a SUPER SIMPLE and great vegan royal icing! Perfect for cookie decorating -- floods great and sets well!

Ingredients

  • 4 cups powdered sugar
  • 1/3 cup aquafaba (the liquid from a can of beans) unwhipped (just straight from the can)
  • 1 tsp cream of tartar
  • 1/2 tsp vanilla extract (or whatever flavor extract you'd like)

Instructions

  1. Put aquafaba, cream of tartar, and vanilla into a large mixing bowl.
  2. Sift the powered sugar into the bowl.
  3. Beat on medium speed with a whisk attachment until smooth and glossy, about 2 minutes, scraping the sides as needed.
  4. Pipe and enjoy!
