Tofurkey Wrap

This tofu-based meat alternative has actually been on the market for quite some time. It was a great transition food for me when we were first becoming plant-based. I buy it occasionally for things like this — quick. simple. easy.

SO. Life lately: I think my husband and I need a shirt that says: “I survived baseball and softball season 2023." Lol! This was the first year we had 2 kids play, and oh my goodness… Two kids, each 2 games a week, with a 1 year old in tote at supper time.. Man. It was CRAZY LOL! But fun of course!! ❤️ And all of that on top of my teaching workouts in the afternoons plus the new part-time choir directing job I took on... whew! ‘tis been a doozie! Of course, parents in this phase of life get it. I’m with you. We made it. Congratulations!!

Naturally, the concession stand at either field didn’t have plant-based food. So if you didn’t want a hotdog or nachos, “you’re on your own, kid.” I was brainstorming things we could bring on the super busy, back-to-back game nights that we could eat that would be easy to eat on the go. I worked my instant pot to the bone the past couple months, but we were needing literal fast food — something we could hold in our hand and eat on the go. I was thinking “How did my mom do this with 4 kids? What were the things we ate??” And I remembered: wraps. Wraps in the car to tumbling, to softball, to cheerleading. It was for those super busy night. So thanks, Mom!! I’m paying it forward.

The backstory of this particular wrap: The first time I ever started playing with diet was actually 6 weeks before my senior voice recital in college. My voice teacher actually encouraged me to go to the ENT. I would have a week that my voice would be super clear and free, accessing whistle tones, to the next week being super cloudy and fuzzy everywhere in my register, my voice breaking in unpredictable places, and yet nothing technique wise had changed. Eventually I was diagnosed with chronic allergies and was on an antihistamine (terrible for the voice —super drying. at the time it was a new drug Xyzal), sudafed (for post-nasal drip), AND a reflux medication (Zantac). With these medications I was finally gaining more control and consistency within my voice, but I wanted to change other factors in my life that I believed could be contributing to the issue.

I re-evaluated my diet. I cut out fast food (in general, greasy foods), sodas (super acidic and contains caffeine, which dries out the vocal chords), and tried limiting my coffee intake to 1 cup a day (again, acidic and caffeine dries out the voice).

My mom was so sweet and actually helped me in this endeavor. And also as a music education major, many semesters I didn’t have a lunch break, so i would eat on the go, or I would get permission from the professor to eat in class. My mom made these wraps but with turkey. Ughhhh they were SO GOOD!! I had people walk up to my desk multiple times asking where I had gotten the wrap, and my mom actually made an extra one for a student I befriended for lunch one time 😂❤️ So sweet. So, here’s that wrap, in vegan form!

Tofurkey Wrap

A perfect "on-the-go" vegan option! Use any condiment, nut, seed, or dried fruit of your choice!

Ingredients

  • 1 burrito size tortilla of choice
  • 1/2 - 1 Tbsp vegan mayo
  • 1/2 tsp mustard (dijon is great for this)
  • 1 drop of vegan Worcestershire (Kroger brand and Lord Sandy's are vegan)
  • 1/2 package of deli sliced Tofurkey of choice
  • 1 slice of vegan cheese of choice (I LOVE "Follow Your Heart" cheeses)
  • 1 handful of spinach or other green of choice
  • 1 Tbsp sunflower seed kernels
  • about 1/4 cranberries or another dried fruit

Instructions

  1. Spread the vegan mayo, mustard, and drop of Worcestershire on the tortilla.
  2. Place Tofurkey, then vegan cheese on the tortilla, closer to the edge you'll be rolling from.
  3. PLace greens on top of vegan cheese. Sprinkle with sunflower kernels and cranberries to your heart's content.
  4. ROLL: Fold the side edges of the tortilla in about 1". Roll up from the side where the Tofurkey is on.
  5. Enjoy! Can wrap in foil or pack in a lunch box for on-the-go eating.

Notes

~ GET CREATIVE! Use ranch and some vegan cheddar cheese for a standard ranch wrap! Throw on some vegan bacon bits!

~Try a different hummus spread and throw chopped olives with vegan feta for a Mediterranean twist. Make it your own! Make it delish!
