Chickpea Salad Sandwiches
RECIPE BELOW!! Sooooo a recipe card for this recipe is way overdue. And to those of you who have had these sandwiches before and asked for the recipe, here’s the official card instead of a text message lol.
I always loved chicken salad sandwiches growing up, but we never had them at home. It was strictly a party food. In the south, I feel like a salad sandwich is just a staple for any party of get together: birthday party, baby or wedding shower, wedding reception, tailgate, family reunion, Cajun music jam session… It was just one of those things that was always available for gatherings.
Naturally, because it was so ingrained in my memories as a “gathering” dish, I wanted to have something like it but plant-based. It’s so easy, y’all. Because it’s so easy is the reason I never made a recipe card for it — it’s just like chicken salad but with chickpeas and vegan mayo. Seriously. You can take your family recipe plant-based/vegan by subbing in chickpeas and vegan mayo. Boom. Done. Delish.
Because of the vegan mayo in this recipe, I technically should probably call these sandwiches Vegan, not plant-based. If you make your own cashew mayo, then you could call them plant-based. But I’ll be candid with you: as someone who used to obsess over the perfection and cleanliness of diet, to the point where I almost homemade everything, I’ve let it go. It’s ok to use store bought mayo. It’s going to be just fine. ❤️
Try these for your next party or get together! I’m telling you that ALL EATERS love this sandwich. That’s the main reason I make this for parties: no matter what diet people may follow, everyone likes the chickpea salad sandwich. If I know i’m going to have pretty picky eaters, I try to make sure I do some sandwiches on white bread. It’s a little trick that gets people to try the sandwich 😉

Chickpea Salad Sandwiches
Ingredients
- 2 cans of chickpeas, rinsed and drained
- 1 celery stalk
- 1 green onion
- 1/2 cup vegan mayo
- 3-4 Tablespoons of mustard
- 1/2 tsp salt
- 1 tsp pepper
- 1/2 tsp dillweed (can omit if you don't have it)
- Bread of choice for serving
Instructions
- Combine all ingredients in food processor until desired consistency is achieved. Taste and adjust. Serve on bread of choice.
- Chop celery and green onion and add to a large mixing bowl.
- Add the rest of the ingredients to the mixing bowl. Combine and mash with a potato masher until desired consistency is achieved.
- Serve over bread of choice.
Notes
~ These do great for a make ahead party dish. You can make the salad mix the day before and refrigerate, then assemble sandwiches. You could also make and assemble sandwiches the morning of, chill, then serve later. Just be cautious if assembling too far in advance because the bread could get soggy.
