Easy Veggie Pot Pie
This was one of my go-to’s when we first went plant-based. It was familiar enough and tasted similar to chicken pot pie! The video is a couple years old now, but feel free to give it a watch and see how it’s done if you’re new to cooking. Happy eating!
Easy Veggie Pot Pie (Plant-Based)

Get ready for some southern comfort! This was one of my go-to's when we first started eating plant-based. I love the flavor and comfort it gives!
Ingredients
- 1 russet potato, peeled and diced
- 1 small onion, diced
- 2 celery stalks, diced
- 3 cloves of garlic minced
- 2-3 cups low sodium vegetable broth, divided
- 1/4 cups fresh parsley, minced
- 1 bag frozen mixed vegetables
- 2-4 Tbsps corn starch
- Salt and pepper, to taste
- 2 frozen pie crusts, thawed
Instructions
- In a large pot, boil cubed potatoes until soft. Drain.
- Steam frozen vegetables in microwave or stovetop.
- While potatoes are boiling, cook onion and celery in 2-3 T of vegetable broth until softened. Add garlic and parsley and cook until aromatic, about 1-2 minutes.
- Add 1 cup of broth, cooked potatoes, and vegetables to pan. Season with salt and pepper to taste. Mix 4 Tbsps corn starch with 1 cup of broth until dissolved. Add to pan and mix. Add more vegetable or corn starch as needed to achieve a thick pie filling consistency (the mixture WILL thicken as it cooks -- make sure it's a thick gravy-like consistency before you remove from heat). Remove from heat.
- Preheat over to 400 Fahrenheit. Fit 1 thawed pie filling to your baking dish (I use a 10.5 x 7.5). Spoon pie filling into the crust. Place other thawed pie crust on top. Pinch the edges to seal. Cut slits and bake until golden brown, about 30 min.
- Let sit about 10 minutes before serving. Enjoy!
Notes
Use any crust you want for this recipe! One of my favorites was actually the gluten-free cauliflower crust -- it gave the pie a crisp top crust!
Don't make it complicated, just throw in whatever vegetables you have! Make it your own!
