Vegan Ice Cream Cake

The crunch from the homemade crumble crust with the creamy ice cream is a match made in heaven! 📖 This recipe is pretty easy! We have just a couple of ingredients and a little bit of time!

1. Made the crumble crust
2. Pack into pan.
3. Cover with ice cream.
4. Freeze to set!

If you want a delectable dessert that everyone's going to talk about, you have found it. My extended family request this at family gatherings -- we all love it! Oh, and it's vegan!

Ingredients

  • 2 cups flour
  • 1 1/2 cups chopped pecans
  • 1 cup oatmeal
  • 1 cup packed brown sugar
  • 2 sticks of vegan butter, melted (I love Earth Balance for this recipe!)
  • Hershey's chocolate syrup
  • 4 pints of vanilla vegan ice cream (Oatly is one of the best and most dairy tasting vegan ice cream I've ever had!)

Instructions

  1. MIX the flour, pecans, oats, sugar, and vegan butter until everything is well coated and moist.
  2. BAKE: Spread mixture evenly on a baking sheet & bake for 15 min at 375 Fahrenheit. Toss, evenly spread, and bake for additional 5 minute intervals, tossing between each, until the mixture is a dark, dark brown but not burnt (see video! Think darker than graham cracker here). I personally did 5-6 toss and bakes for 5 min.
  3. MAKE CRUST: While still hot place 3/4 of the crumble into a large casserole dish (8x13 or something similar). Sprinkle all over with Hershey chocolate syrup, mix, and pack down into dish.
  4. ADD ICE CREAM: Add a scoop of softened ice cream onto the crust until you've covered the entire crust surface. Use a rubber or offset spatula to spread the ice cream evenly across, filling in any gaps.
  5. TOP, FREEZE, & SERVE: Top with reserved crumble pieces and some chocolate syrup. Cover and freeze for AT LEAST 2-3 hours, though the longer the better as it will really set. If you remove too early, the pieces will fall apart when trying to scoop out of pan.
  6. Serve & enjoy!

Notes

~ If you can't find Oatly ice cream, Ben and Jerry's would be my next go-to. Something without coconut (unless you like that, then go for it!)
