Blackberry Nice Cream

Wild blackberries are ripening in the south, and we came across a lot at the park yesterday!

Many of my Sunday childhood memories were going to Pawpaw’s house for lunch, then heading out into the woods to walk the cattle trail. You found a good walking stick, and off you went! In the summer, those woods would be covered in blackberry bushes — with lush, huge juicy blackberries! We could easily get a bowl and bring it back to the house to enjoy while cooking off from the heat of the walk. Paw-Paw always slightly mashed the blackberries (always in one of those Corelle bowls!) and sprinkled sugar on them.

While typical southern blackberry desserts include cobbler and an array of sugar filled assortments, this is an easy, fresh, and delicious way to enjoy them!

Blackberry Banana Nice Cream

Blackberry Banana Nice Cream

Say it ain't so?! Ice cream from bananas with a beautiful blackberry swirl?! It's so, and it's so delicious AND good for you! Try out this simple and healthy summer treat! It only takes about 10 minutes of your time -- the freezer does the rest!

Ingredients

  • 4-6 ripe bananas
  • 1-2 Tbsps non-dairy milk
  • 2 tsps vanilla
  • 1 Tbsp agave nectar or maple syrup
  • 1 cup fresh blackberries

Instructions

  1. Slice bananas and place in single layer on lined baking sheet. Freeze. (This makes it easier for a blender to blend up!)
  2. Blend bananas, 1 Tbsp of milk, vanilla, and agave until super smooth. Use the additional milk to thin out mixture to blend if necessary (just use with caution — more milk = runny nice cream). Taste & adjust flavor if needed. Pour into freezer safe dish.
  3. Blend a handful of blackberries. Spoon tablespoon fulls piles onto the banana nice cream. Run a butter knife through the mixture to create blackberry swirls to your hearts content. Top with the rest of the blackberries.
  4. Cover & freeze 2-3 hours or overnight. Thaw for about 10 min before scooping and serving.
  5. Enjoy!

Notes

  • Use spotty bananas for a sweeter nice cream!
  • Some find frozen bananas are difficult to blend in some blenders. I have a Vitamix. Before I had (still have) single serve Ninja blender and it does well. If you have trouble, you can try blending before freezing the bananas. I don't see why it wouldn't work. The only caution is don't pour in too much liquid because it will effect your texture.
