Easy 1-Pot Meal Preps

We’re all busy. I get it. And with recently having a baby that hates everything except being held, I’m in need of 1-pot meals now more than ever!

One of the easiest ways to start really eating plant-based with not much effort or extra time is to make a big pot of something. Chili, soup, stew, curry, whatever. That way, you just eat from the pot for lunches (or dinners) all week. It really does make it easy. This is how my husband and I thrive on the plant-based diet because we really don’t have time for cooking every night (even though I’d LOVE to do that! It’s kinda my thing).

Here’s a collection of easy 1-pot meal preps. My list is not long, however the longer I keep this website the more I’ll add to it. We have a running rotation of recipes that we’ve tried and love. We just pick from the list to cook for the week. Start your own list to help you remember what you liked and what you didn’t!\
